This is actually a really good question...
One easy thing to do, is to get prime or choice Filet's (butcher station at the grocery store can help you). Rub them with kosher salt, fresh ground pepper and olive oil. Let it sit for 30 min or so then broil, grill, or fry on a hot skillet. Be careful, as olive oil burns at a lower temp than other oils, so if that makes you nervous, nix the oil. If you fry in a skillet, use canola or another nuetral oil.
Cook until the internal temp is about 140 - 150 or so.
Ok, that is easy. Concentrate on the sides now. Baked potatoe..... Nah...
Creamed Spinach... Yeah!
This is from Emeril... Seems easy enough and is a forgiving dish.
3 tablespoons butter
1 cup minced onions
salt
fresh ground black pepper
3 lbs fresh spinach, washed, stemmed and finely chopped
2 tablespoons chopped garlic
2 cups heavy cream
12 ounces grated sharp cheddar cheese
1. Preheat the oven to 375 degrees.
2. Lightly grease a 6 cup casserole.
3. In a large saute pan, melt the remaining butter.
4. Add the onions and season with salt and pepper.
5. Saute for about 2 minutes, or until the onions are soft.
6. Add the spinach.
7. Season with salt and pepper.
8. Saute for 3 to 4 minutes.
9. Add the garlic and cream.
10. Mix well.
11. Season the mixture with salt and pepper.
12. Bring the liquid to a boil and reduce to a simmer.
13. Simmer the mixture for 6 minutes.
14. Remove the pan from the heat and turn into the prepared pan.
15. Add 1/2 of cheese to casserole and stir.
16. Sprinkle the top with the remainder of the grated cheese and place in the oven.
17. Bake for about 4 to 6 minutes or until the cheese is slightly brown and bubbly.
Serve with a crusty bread, like a baguette or something from the bakery at the grocery store.
See, impressive, fun and didn't take that much.
Also, as you cook, remember that there are many prepackaged sides or other ways that allow you to concentrate on one or two dishes and the rest is easy.
Who has the time to make everything from scratch? No one.
How about French, and easy ?
STEAKS + COGNAC %26amp; MUSHROOMS SAUCE :
4 steaks
butter
cognac
mushrooms (like morels or a blend of wild)
double cream or cr猫me fra卯che
salt %26amp; pepper
In a pan, cook the steaks in butter, salt %26amp; pepper.
When they're at mid cooking, add the mushrooms.
Turn up the heat to the max, pour some cognac and light the fire.
Stir and turn the steaks. When fire is off, add the cream. They're ready
You can do the same, but instead, don't use mushrooms at all and
do a sauce with cream and blue cheese, salt and pepper on the side.
Still use the cognac and the flamb茅 process with the steaks,
but pour the sauce indivually in the plate, not in the pan
FLANK STEAK, SHALLOTS %26amp; VINEGAR :
1 big flank steak (or skirt steak)
tons of sliced shallots
1 1/2 glass of vinegar
butter
salt %26amp; pepper
In a pan, put some butter, then when melted, add the shallots, a little salt %26amp; pepper and
when golden, take them out and put the steak in the pan, salt %26amp; pepper again.
Cook on medium heat. When golden on both size, add the shallots and the vinegar and
let it reduced a little. When you have an homogeneous sauce, it's done.
Serve with boiled potatoes or fresh pasta
SHRIMPS WHISKEY (or scallops):
Shrimps or scallops
heavy cream
a glass of whiskey or cognac (whiskey better)
salt %26amp; pepper
butter
Put butter in a pan and when melted, add the peeled shrimps (you can leave the skin,
but it's messier to eat), salt %26amp; pepper.
Cook on medium heat.
When starting to turn pink, turn the heat to the max, pour the alcohol and light a fire with
a match (careful the eyebrows ;-)). Then add the cream and voil脿 !
Serve over white rice (better) or fresh pasta
BANANAS FLAMBE :
butter
bananas
dark rum
sugar (a little)
Cut the bananas in 2, in their lenghts.
In a pan, put butter and the bananas.
Sprinkle them with a little sugar. Cook both sides, but careful, they need to stay firm.
Pour some dark rum on top and light the fire.
Turn them while burning, and tada, a delicious dessert. Very rich, but yummy
You can do the same withe apples
I know, a lot of alcohol, but it makes a dish sooo tasty
Bon app茅tit
try this...
get a medium sized sirloin steak and cut it into bite sized pieces. throw it in a frying pan with some chopped green peppers and onions and some fresh mushrooms (if you like 'em) cook this until the meat and the mushrooms are done.
while that is cooking, microwave two potatoes. i usually buy the kind that are already washed and wrapped in plastic. this usually takes about 9 to 14 mins for the potatoes to be done. they are done when you can poke a fork into it and its done in the middle.
then, take the potato, unwrap it, mush it with a fork and put some butter on it. then take your hot meat mixture and put it ON TOP of the potatoes. then, smother them with shredded mozzarella and cheddar cheese and nuke 'em til the cheese melts. its SOOOO GOOD~

There's a llittle work to this recipe- but it's so delicious and tastes like something you'd order in a restaurant.!
CHICKEN STUFFED MANICOTTI
8-10 manicotti noodles, slightly undercooked
2 cups finely chopped, cooked chicken
4 TBSP parsley
1 tsp thyme
1/2 finely chopped celery
1 cup grated Monterey Jack Cheese
3 TBSP dry white wine
1/2 tsp salt
****SAUCE****
6 TBSP butter
6 TBSP flour
3 cups chicken broth
1 tsp tarragon
1 cup grated Monterey Jack Cheese
Prepare sauce. Melt butter, stir in flour, cook three minultes, stirring constantly. Slowly add chicken broth, cook 3 minutes, or until thickened. Add tarragon, cheese and salt; cook till chees melts. Spoon film of sauce over bottom of baking dish, 10x13 or larger.
Combine all stuffing ingredients, stuff manicotti. Place them in baking dish leaving room for expansion. Pour rest of sauce over manicotti. Cover with foil and bake at 350 for 40 minutes.
A nice cucumber salad or tossed salad goes well with this. Don't forget the garlic bread or breadsticks, and White wine!
ENJOY and good luck! You'll wow him with this!
That's soo cool that you want to make your husband happy!
My advise to you isn't recipes. You've heard the cliche, practice makes perfect. You know what your hubby likes, go to sites like allrecipies.com or epicurious.com and look through them with a couple of dishes in mind. Or, heck, you can search by cuisine, main ingredient, etc. When you find the ones that sound good make sure they have a good rating by at least 20 people (this is by stars or forks). Also, read the notes people add, read at least 5, sometimes there is a problem with the recipe but someone figured out how to fix it and make it just right.
Good luck!
I cook for my husband every night... he used to never be into fish, but his two favorite meals that I make are Brushetta Topped Tuna Steaks or Blackened Lemon Pepper Salmon... they are surprisingly easy to make and they end up looking and tasting like a wonderful $20 plate at a nice restaurant. I also have recipes for homeade alfredo sauce (family recipe... hard to make but worth it), Arroz Con Pollo, Stuffed Bell Peppers, and Shrimp Scampi. E-mail me at jessferg@yahoo.com if you are interested.
